As I announced on my last blog, I am invited to The Good Food & Wine Show this Friday to demonstrate my original sake cocktails at Kizakura & Choya Umeshu booth.
I get used to do a performance in front of the audience from my previous career, however, this is officially the first time I would ever try a cocktail demonstration to the public so now I am getting nervous a bit.. of course.
I have over 20 sake cocktails so far but I don’t have many ones using Umeshu. So I tried to a few different things using Umeshu this afternoon to make up a new cocktail for the show. (Well, also it might be a good excuse I can start sipping sake early.)
I tried to make a Umeshu & Lychee based cocktail. I mixed Choya Umeshu and Lychee liquor Soho with some fresh grapefruits and lime juice. It came out with a nice balance of sweetness and sourness. However, the cocktail was still too sweet for me so I made a salted rim to gives some punch into it and sip it.........it worked so well! (Just like a classic salty dog)

Now it’s time to name it…..ummmmm…… sweet and sour….. ummmmm...How about "Bridge Collection" !? The reason is quite simple. The main influence for this cocktail is some cocktails I had at the bar in bridge road last week. It was very nice and i had a very good time there. This is a dedication to them from me.

As I mentioned before, since last April 17 I have been running Japanese izakaya style sake bar in Richmond called “Sake & Grill MAEDAYA”. From the restaurant name, you can easily imagine that we specialize in Japanese sake & charcoal grills. We stock over 60 types of premium Nihonshu, Shochu, Umeshu & Japanese local beer directly imported from Japan. (Actually, you can find most of sake at MAEDAYA in SakeJapan.com.au, too.)
There are two floors in MAEDAYA. At ground floor, our main featuring is SAKE and YAKITORI charcoal grill. Our ground floor menu consisted of over 70 different authentic Japanese tapas dishes such as Edamame, Gyoza, Karaage, Agedashi Tofu & Wagyu Steak including over 25 vegetarian dishes. It will be a little fun thing for you to stop at MAEDAYA on a way home to have a few skewers & a couple sake glasses with your colleague or friends.
At upstairs, we feature YAKINIKU which is Japanese traditional charcoal grill BBQ on your table. Different from Teppanyaki, you can easily grill thin sliced meats by yourself along with seafood & vegetables. It will be a lot of fun for bigger group or family to share a table and a couple grillers together.
So basically, I will be behind the bar most of time and I am happy to talk to you anytime. If you have any questions about sake, I am there to give you an answer so please feel free to talk to me. Also, I will suggest some matching sake and food upon to your request.
I hope you would come along to MAEDAYA one day and experience a real Japanese izakaya feeling.

Welcome to Sake Master Blog HAPPY SAKE HEAVEN! My name is Toshi Maeda, a Japanese Sake Master based in Melbourne, Australia as well as a site manager of SAKE JAPAN.com.au.
This is my first ever blog and my aim is quite simple. I just want to introduce you more about Sake and Japan informally through this blog. Basically, I will tell you about things like new sake bottle I try recently, some ideas of good food & sake matching, latest Japanese sake movement, latest movie I watch, people I met etc..
I am also managing the Japanese Izakaya style restaurant sake & grill MAEDAYA in Richmond, VIC where you will be able to try most of sake bottles you find at SAKE JAPAN.com.au. (Even though we are still waiting for the liquor license approved.) We only opened 4 weeks ago and it keeps me super busy you would imagine. I will try my best to update this blog and hopefully it would give you more idea how to enjoy Sake and you would feel much closer to it.
