Ginban Banshu 50 Junmai Daiginjo is made from 50% polished Yamadanishiki, the king of sake rice, from Hyogo combined with one of the top 100 water in Japan, Kurobe River in Toyama. These beautiful natural elements give this sake a light bodied & medium dry taste with a fruity fragrance. Once you sip it, the first impression may be a little bit different from other typical Yamadanishiki rice made sake, for example, strong fragrant, rich bodied & semi dry sake such as Suishin Komenokiwami or Tatsuriki Tokubetsu Junmai. In contrast with it, Ginban Banshu 50 Junmai Dainginjo has a fairly soft Ginjo fragrance and there is a certain sweetness & umami in flavour but the body is clean & light. There is also a hook of dryness along with a long lasting aftertaste. It may match well with tuna & salmon sashimi with wasabi & soy. This is a good quality Junmai Daiginjo for this reasonable price.
