Clean, light & dry flavoured Junmai Ginjo made from special sake rice Yamadanishiki & Gohyakumangoku grown under an exclusive direct contract with a farmer along with beautiful clean snow water from Mt. Hakusan. Once you sip it, a good amount of acidity & tiny dryness attack your tongue gently. Soon after a small amount of sweetness & well balanced acidity are spreading very slowly all over a palate. It is just like a powder snow turning into water slowly on a palate. Acidity & dryness are turning into stronger towards the end with changing its style little by little. This sake is very clean and sensitive and ideal for drinking chilled. It should match well with white fish sashimi or lightly stewed mountain vegetables. It's all about Japanese subtlety.
