One of the most famous premium sake breweries in Hiroshima, Aihara Brewery has been producing a high quality fruity fragrant, soft body & dry finish Hiroshima style sake for over 100 years. This time, Aihara had a challenge with newly introduced quality sake rice AIYAMA, grown in Hyogo prefecture by qualified farmers for limited amount only. AIYAMA rice is one of the biggest sized rice among other premium sake rice. The core starch part SHINPAKU is quite big and it is hard to be polished down with remain of SHINPAKU neatly. Aihara Brewery polished this AIYAMA rice down to 50% to make this beautiful fragrant semi sweet Junmai Daiginjo. The fragrance is very fruity and complex. You could see a mixture of melon, apple, peach or even a bit of strawberry on your nose. Nice sweet impact on your front palate and the body is quite soft but rich. Clean in a flavour and its sweetness turns into a soft dryness towards the end. It will be a quite good matching with cheese, nuts or dried fruit just like when you enjoy semi dry chardonnay. Drink slightly chilled or room temperature. Super limited premium bottle as only 480 bottles has been produced this year.
